My family has food issues. Hell, we have so many food issues, we might as well start a subscription and be done with it. Some of our food issues are chosen and some are thrust upon us by our bodies. To start off the volumes of our dietary "restrictions" we're vegetarian, bordering on vegan, though we do occasionally use a little butter, and I'm partial to whipped cream. It's not always possible to buy local or organic on our budget, but we like to, and we try to consume more local food in season when we can. Also, we have our share of food allergies including, raw onions, wheat, nuts, and a rather severe reaction to eggs in my son, the smallest of our family with food issues. Out of the four of us, my daughter is the only one who isn't reactive to anything she eats, and she tends to eat pretty well for a 4 year old.
Its egotistical to assume that anyone would be interested in what I have to say, but I hope to be a resource for other people who stumble into the world of food allergies, either by accident, genetic accumulation, or a bad poker game (how I got most of mine, Happy Anniversary honey).
I hope to occasionally share recipes that have made feeding my family not only easier, but tastier too. Lots of kids are picky eaters, and I count myself lucky that my kids aren't, but a tasty bite on a plate is never a bad thing.
Today's recipe we had for breakfast and my husband declared them "Om, nom, nom, nom..." So, without further ado, I give you:
Wheat-free egg-free Peach Cobbler Pancakes
1 1/4C spelt flour
1T sugar
1/2t salt
1T baking powder
1/2t baking soda
1 T melted butter (you can use vegetable oil for this, but I prefer the buttery taste and I was out of vegan butter this morning)
1 1/2C vanilla soy milk
1 peach, sliced thin
1/4t cinnamon
Combine all ingredients except for peach slices and mix until mostly smooth. Pour about 1/3 cup onto a hot griddle and the top with peach slices, when the sides of the pancake are all bubbly, flip over. Serve warm with butter and syrup (we used a thin organic maple syrup and the kids gorged themselves)
